Just Opened: The Flying Pig

Last weekend, we rounded up a few of our notable foodie friends and headed out to The Flying Pig, a recent addition to Yaletown’s bustling dining scene. Having already garnered quite the culinary buzz since it opened less than a month ago, we were indeed intrigued and wanted to taste-test this self-professed “nouveau Canadian-style bistro” ourselves.

Conveniently located at 1168 Hamilton Street, we lucked out on a sultry summer Saturday night and found ourselves seated at a prime people-watching table in the heart of all the action. And plenty of action there was as the spacious, French-country inspired room seemed full of beautiful people with an appetite for classic home-style dishes replete with a touch of the unexpected. We tried the salmon carpaccio appetizer done three ways (still dreaming of the candied salmon!) and were tempted by one of the evening’s feature entrées: pan-seared Arctic Char served over risotto – tender and bursting with flavour.

We also enjoyed the pan-seared Halibut, perfectly prepared and accompanied by (perhaps the best invention ever) crispy gnocchi and a side order of crispy Brussels sprouts as well as the lobster risotto.

Stuffed to the gills – no pun intended – we left impressed…and promise to return to test out their tempting deserts.

We recommend you race down to The Flying Pig when you’re looking to escape to a space offering a laidback atmosphere and approach to fine dining in the heart of Yaletown. Think Napa Valley’s French Laundry meets Toronto’s Grace Restaurant and you’ll get the idea.

The Flying Pig is presently open for lunch and dinner-only, but will be offering full service brunch as well as cooking classes shortly.
