Popping Up: Charpop

Charcut is the innovative leader in Calgary when it comes to anything that is food-related. Since opening it’s doors, there has been a steady stream of YPs enjoying the meaty menu. In fact, they were named one of Canada’s Top 10 New Restaurants of 2010 by Enroute Magazine. Cahrcut was one of the first establishments to introduce food trucks to the city with their Alley Burger truck, which has become a favourite amongst Calgarians.

Now, they have pushed the envelope yet again with Charpop. Charcut chefs Connie DeSousa and John Jackson have partnered with Grant Van Gameren (Executive Chef of Enoteca Sociale), and baker extraordinaire Aviv Fried to create and launch this stealthy new restaurant.

Despite it being a mobile, ever-changing location with limited space, limited seating and for a limited time, Charpop runs as a full-service restaurant with a variety of a la carte menu items for diners to choose from. Think foie gras and blood sausage with rutabaga and maple bourbon gastrique. Or for something lighter, crispy pig ear salad with soft-cooked farm egg, chili and lemon vinegar.
