First Look: Bohemian Gastropub

How lucky are we to live in Toronto? The city is awash with cultural fare as vast as any in the world, we have attractions that excite locals and tourists alike, and our culinary scene is an emerging destination for worldly gourmands. We also have some of the most innovative chefs who are breaking from the traditional and spinning classic fare in modern ways. Take Bohemian Gastropub, a new venture by restaurateur Paul Boehmer –of the famed Böhmer (if you need to Google it, write Boehmer, it’s easier) Restaurant on Ossington – opening on Friday.

The gastropub – simply a portmanteau of gastronomy and pub – will serve up high-end bar food to the 60 or so patrons the small but well-constructed space can fit. In its current state, it can be described as modern minimalist, but it’s surprisingly inviting and bright. The menu is helmed by chef de cuisine Christopher Scott, a 27-year-old chef who has had training under such notable names as David Adjey.

When Chris signed on for Bohemian Gastropub, he was given almost carte blanche to execute Boehmer’s vision for a German-inspired spot in Toronto. Turning towards more Alsatian fare – which encompasses German, Austrian, and even influences of Italian – Chef Scott has crafted a small but exciting menu of haute pub food that will pair perfectly with the 12 beers on tap (two of which will be rotating based on what’s exciting and in season).

Diners can expect apps like Spaetzle Poutine – spaetzle is a German egg-pasta – and Fried Pig Ears – which chef describes the process resulting in a deep-fried and crispy glorious ear that’s one part pub fare, one part molecular gastronomy. The mains – all coming in under $21 by the way – count Pork Knuckle with potato-bread dumpling and Maultaschen – kind of like a ravioli – with lamb shoulder and lamb bacon broth. Aside from the crafted menu, Chris will make different plates that will rotate on an almost weekly basis, depending on how long the ingredients last.

There’s a small but sensible wine and cocktail list at Bohemian Gastropub – including one of our favourite Bermudian classics, the Dark ‘N Stormy – and the beers on tap are all from Ontario Craft Brewers (we’re particularly excited to have a plate of Fried Zucchini Dumplings with a Spearhead Hawaiian Pale Ale). Bohemian Gastropub won’t be taking reservations, so if you want a spot at the centre-front communal table, it’ll probably be a smart bet to head over after the clock strikes 5pm. Bohemian Gastropub’s kitchen will be open from 11am to midnight daily at 571 Queen Street West, Toronto.
