You’re going to start seeing tacos differently.

King West (220 King St. W. to be exact) is soon to be home to yet another Mexican eatery – only this time, we’re going to use words like fine and dining to tell you about it. 

Los Colibris is set to open its doors June 18th and based on how much we enjoyed their sister restaurant, El Caballito, we’re expecting big things. In fact, the 150-seat, 3,500 sq. ft. second floor space promises to be everything a quick taco bar isn’t. Its focus is on exceptional hospitality, authentic cuisine, and inspired design. The authenticity shouldn’t be too much of a stretch considering Mexico-trained Executive Chef Elia Herrera claims both her mother and grandmother have greatly influenced her cooking. Of course, having a sommelier, two private dining rooms, an open ceviche kitchen, white linen service, and a shared 100-seat patio with El Caballito probably doesn’t hurt Los Colibris’ appeal much either.
