Model Milk has opened to rave reviews here in YYC. Located at 308 – 17 Ave. SW, it’s already a destination for many of Calgary’s YPs. The minute you walk into the space you see a synergetic meld of modern and historic. In fact, the name is a throwback to the original space – built in 1934 it was a dairy processing plant called Model Dairy that produced ‘Model Milk’. The design embraces the history of the space without being kitschy (quite rare), and the layers of years of change have been peeled away to bring new life to what once was. A mixture of concrete floors, exposed brick, subway tiles, warm woods and whitewash create an exciting, inviting and unpretentious space that allows the food and experience to take centre stage.
Chef and co-owner Justin Laboe brings his passion and experience (he has worked in seven different countries for some of the world’s most prestigious kitchens alongside some of the best chefs) to this sustainable restaurant – many of the ingredients are sourced from local producers that Laboe knows personally. His dishes speak to his life abroad and his philosophy of “it’s not about how many different things you can add to a dish, rather it’s about how to simplify a dish and use the right cooking technique,” that allow him to maximize flavour while keeping the integrity of the food. We recommend trying the Calamari Guanviale: a perfect blend of calamari, cured pork jowl, soybeans, croutons, chili and dried tomatoes.
With a manageable price point – apps range from $12 to $16 and mains between $17 to $29 – Model Milk is the perfect spot for any night of the week or occasion. Pop by for one of their signature cocktails in the street-front bar or have dinner with friends in the main room (there are two levels allowing for a bird’s-eye view should you be so inclined). Model Milk is the type of place that YPs may pop into with the intention of a quick bite, but will more than likely find themselves staying for the entire evening as they become lost in the intimacy of the room.
