Hawksworth Restaurant

Newly opened Hawksworth Restaurant is the namesake of renowned Vancouver Chef David Hawksworth, who has cultivated a loyal following of fans in his career thus far. Hawksworth has been catching the eye of the media as well: The Vancouver eatery was recently proclaimed to be “The Best New Restaurant in Canada” by Macleans.

While some Vancouver diners were disappointed to see him leave West, his new restaurant does not disappoint. The stunning decor at Hawksworth was designed by Alessandro Munge, of Munge Leung, who created four distinct areas within the restaurant. But it’s not just the decor or talent behind Hawksworth that is causing it to gain praise. Hawksworth currently offers dinner, lunch, brunch and bar food, but will begin offering breakfast later on in the summer.

The menu selections are exquisite, yet refined, and the cocktail list is expertly crafted. For dinner, be sure to make the Maple Bacon Sweetbreads with black truffle, kohlrabi and kumquats your appetizer. Deciding on your entrée may prove to be difficult, as each menu item is as tempting as the last. If you’re set on seafood, go for the Pan Seared Sooke River Trout with fingerling potatoes, haricots vert, olive and brown butter. If seafood isn’t really your thing, you might want to bring along a friend and split the 22oz Dry Aged Rib Eye with la ratte potato, spring bouquetiere, crispy bone marrow and chimmichurri. On the brunch menu, the Sablefish Frittata is accented by watercress, vine-ripened tomato, and fresh rictotta, while the Apple Beet Salada finds chevre, walnut and dill lightly glazed by caramelized honey.

Hawksworth’s early fame is well-deserved, and the superb quality of the meals and well-heeled crowd make this a definite ‘dress-up’ spot to put on your radar this summer. Hawksworth Restaurant at the Rosewood Hotel Georgia, 801 W. Georgia Street, Vancouver.
