12 Seasonal Toronto Cocktails You Need to Try Now

We know a gin Martini can really hit the spot and few things are nicer than unwinding after work with a glass of great wine.

But living in a place like Toronto, we think you’d be remiss to not take advantage of the incredible seasonal creativity our city’s collection of celebrated mixologists stir up every fall.

From ciders to Caesars and scary-good syrups to infused booze, here are 12 Toronto fall cocktails we think you should try before everything starts tasting like eggnog… 

1. The Dark & Spooky – Nota Bene

Ingredients:

– 1½ oz smoked Maker’s Mark bourbon
– ½ oz maple syrup  
– 4 dashes of Angostura bitters
juice of half a lime
– house ginger beer    

2. Autumn Sangria – Barsa Taberna

Ingredients:

– 700 ml Chardonnay
– 300 ml soda water
– 2 oz plum wine
– 1-2 oz reduced apple cider
– 1 oz Spanish brandy
– 75 ml smoked maple syrup
– 75 ml vanilla and ginger syrup
– roasted pears
– preserved black plums
– Thai basil

3. Heirloom Caesar – Barchef

Components:

– tomato water bowl
– celery snow
– Clamato snow
– fried capers
– fresh parsley
– basil sprouts
– fresh horseradish
– pickled beet brunoise
– grain spirit infused with thyme, shallot, garlic, Star Anise, and fennel 


4. Warm Rum & Spiced Cider – SpeakEasy 21

Ingredients:

– 1 oz Bacardi Black
– 1 oz Bacardi Oakheart
– warm clove spiced apple cider
– cinnamon stick (garnish) 

5. The Angry Badger – The Carbon Bar 

Ingredients:

– 2 oz charcoal-infused Jack Daniels
– 3/4 lemon juice
– 1/2 lime juice
– 1 oz egg white
– 1 oz spiced pumpkin syrup
– 2 dashes of Wormwood bitters

6. Chartreuse Or Dare – Bestellen

 Ingredients:

– 1.5 oz Jim Beam infusion: apple, mulling spices, ginger
– .75 oz green Chartreuse
– 1 oz lemon juice
– 1 oz simple syrup
– 1 oz egg white


7. The Marshmallow Flip – Rasa

 Ingredients

– 2 Oz lot 40 rye
– .75 Oz marshmallow root syrup
– 1 whole egg
– Fernet 
– grated nutmeg 

8. Shaun of the Dead – Nota Bene 

Ingredients:

– juice of 1 lime
2 dashes of Worcestershire sauce
– 2 dashes of hot sauce
– ground black pepper
– 6 oz of light bodied beer 

9. Grace Under Fire – Northwood 

Ingredients:

– Alberta Dark Horse Rye
– Pernod
– house pumpkin, cinnamon and cardamom syrup
– lemon juice
– maple syrup 
– bitters
– egg white (so it looks a little like a pumpkin pie)
– lemon peel garnish 


10. Ontario Apple Cider Margarita – SpeakEasy 21

Ingredients:

– 1 oz Cazadorez Tequila
– 1 oz Triple Sec
– fresh Ontario apple cider
– orange wheel

11. El Diablo – The Carbon Bar

 Ingredients:

– 2 oz Avion Tequila
4 oz Fever Tree ginger beer
– 1 oz lime juice
– ½ oz beet pomegranate syrup 

12. Shi-BOO-I – Shibui Robata Bar

Ingredients:

– 1.5 oz of spiced rum
– 1.5 oz of pumpkin syrup
– 1 oz of apple syrup
– .25oz ginger syrup
– .25 oz chill sauce
