How To Create The Most Delicious Plant-Based Snack Platter

An abundant plant platter is the perfect option for dinner parties, events and your next girls night in. To some, plant-based eating can feel intimidating to prepare, but with my simple Food by Maria tricks you’ll be a platter-pro in no time.

STEP 1.

Make your platters colourful, fill them with natural beautiful foods and make sure you try your best to use seasonal fruits and veg!food-by-maria

Ok, so sometimes the hardest part about platters is convincing people to eat all the fruit and veg! Well that is easy! Pair them with delicious, natural (plant based if you can) cheeses. See my Cashew Cream Dip below and my Coconut Yogurt Dip for sweet and savoury options. I jazzed up the Bettina’s Cashew Cheese used in the photo, with up Greek style by adding some white onions, garlic cloves, thyme, oregano and a bit more lemon. For fruits, I would suggest something like this to ensure your guests eat it all up!

A COCONUT YOGURT DIP!

  • Coconut yogurt
  • Cinnamon
  • Coconut Nectar
  • and melted white chocolate (make sure it’s cooled before stirring)

THE BEST CASHEW CREAM EVER!

  • 2 cups of cashews, that have been soaked in warm water for 15 minutes
  • juice of one lemon
  • 2 tbsp nutritional yeastCASHEW1
  • ½ of water
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp fresh cracked pepper
  • My favourite additions are: cilantro, thyme and paprika.
INSTRUCTIONS
  1. Into a high speed blender add all ingredients.
  2. You want to blend until the mixture is completely smooth.
  3. You can add your favourite spices and herbs to satisfy your taste buds!
  4. Store in tight sealed container in the fridge. Stays fresh up to 3-4 days.

STEP 2.

Choose quality over quantity! So choose good quality ingredients. I don’t care if you eat meat or do not.  The quality of your ingredients will make all the difference, and will also ensure people actually eat what you put out on these platters. Sometimes spending a bit more money will make it that much better.

So go all out, choose items like yummy thyme + raisin crackers and anything that speaks your food language.

STEP 3.

Choose finger food and keep things simple. The easier to eat, the more the crowd will want to dive in.

I like adding raw veggies and fruit to my platters, Festive Energy BitesCashew Cheese, and toasted and salted nuts and delicious crackers!

TIP 4.

Make your platters beautiful by using colourful cloths, vintage ceramics and rustic wooden boards. Your guests will be attracted to your presentation and this in turn will create that “wow factor”.  You want your friends to be excited about the platter you’ve put together, enjoy it, and ask you for tips when they try it out!

TIP 5.

Pre-plan and try to make everything on your platter from scratch!

Create an inspiration board where you will keep all your recipe ideas, platter presentation and grocery list. This will be your saving grace, so do not skip this step. You know what they say…. save the best for last.
